Quale variante e' meglio?

2- I can say nothing to change their mind.
3- Nothing I can say to change their minds.
4- I can say nothing to change their minds.
5- Nothing I cannot say to change their mind.
6- I cannot say nothing to change their mind.
7- Nothing I cannot say to change their minds.
8- I cannot say nothing to change their minds.

Oppure meglio usare "anything"?

Poi dicono che l'inglese è facile...

Senza pensare io direi: "I can't say anything to change their mind(s)".
Sicuramenete la doppia negazione è sgrammaticata a meno che tu non sia
in un film western, le altre mi suonano strane, ma aspettiamo i
madrelingua. Minds/Mind ... boh? mi suona meglio minds.
Nella 1 e la 3 mi sembra che il soggetto diventi "nothing" che "I can
say..." sia la subordinata e che manchi il verbo.

I'm not sure if you realize that the choices that begin with "nothing"
are not complete sentences. As a complete sentence, you might say:
There is nothing I can say to change their minds.

If you use "cannot," you should use "anything"
I cannot say anything to change their minds.

The only acceptable sentence from the choices you've given is:
"I can say nothing to change their minds."
However, it is a more poetic than common as a choice in speech. It is
more common to say:
I can't say anything to change their minds.

I can't remember the last time I heard someone say "cannot." It's
possible that I could imagine instances when people used "cannot" to
emphasize the negative, but most people say "can't."

Yes, your variant is fine because you have reworded the phrase, making
"Nothing" the subject. Tony's point was that the odd-numbered examples
have no subject. 6 and 8 have double negatives, a no-no in English.
